Grilled Corn

One of my favorite foods to grill for family and friends is whole ears of corn in the husk. The corn is so much fresher tasting and the grilled flavor really comes through. Even if you have a small grill, you can do these ahead of time, place them in one of Smarty’s aluminum pans and put them in the oven until dinner is served.
Here’s how I prepare them: Take an ear of corn in the husk and soak the ears in water (either in the sink or in aluminum pans) for at least 30 minutes. Then take the ear and pull the husk back without taking it off. Rub butter on each and sprinkle with salt and pepper. You can also add your own seasoning if you want to spice them up a bit. Pull the husk back up and wrap each ear in aluminum foil. Put on the grill and cook for about 45 minutes.
The water in the ears and husks actually steam the corn. Be careful when you take these off the grill and when taking off the husks since the steam is very hot. If you are making a lot of these and need the grill space, take the ears off after about 30 minutes and put them in the oven while still wrapped in the foil.
The temperature of the oven will vary depending on how much time they need to stay in there. (For example, if you need to make another batch of corn, then put them in the oven on warm at approx. 275 F for 45 minutes.) Your guests will love these… they’re SMOKIN’!!
