Cinnamon Crumble Coffee Cake Recipe Ingredients: For the crumble topping
1/2 cup brown sugar
1 Tbsp sugar
1/2 cup flour
1/2 tsp cinnamon
1/4 tsp salt
5 Tbsp cold unsalted butter, cut into chunks
For the coffee cake
2 cups flour
1 Tbsp baking powder
1/2 tsp salt
1 cup sugar
1 egg, beaten
1/3 cup vegetable oil
1 cup milk
2 tsp ground cinnamon and 1/3 cup sugar, mixed together in a separate bowl
Baking Directions: Crumble topping: Combine brown sugar, sugar, flour, cinnamon and salt in a bowl. Mix in the cold butter by hand, squeezing the pieces into the mixture. Cover and freeze crumble topping while you prep the coffee cake. Preheat oven to 350 degrees. Grease an 8x8 baking dish. In large bowl, mix flour, baking powder, salt and 1 cup of sugar. Add egg, oil and milk to dry ingredients. Stir until moistened. Pour half of the batter into the 8x8 dish and cover with cinnamon-sugar mixture. Pour the remaining batter on top and sprinkle with crumble topping. You may need to break apart the topping into smaller pieces before adding on top. Bake for 40-45 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
