4 Best Summer Pie Recipes

No-Bake Oreo Pie

Oreos run the world! We love Oreos, and we know you do too. That is why we are sharing a delectable no-bake Oreo pie.


For the crust:

  • Oreo cookies (1 cup, crushed)
  • Melted butter (¼ cup)

For the filling:

  • Heavy whipping cream (½ cup)
  • Whole milk (1 cup)
  • Cocoa powder (½ cup)          
  • Powdered sugar (¼ cup)
  • Vanilla extract (1 tsp)

For cookies and cream:

  • Oreo cookies (1 ¼ cup, coarsely crushed)
  • Heavy whipping cream (1 cup)
  • Chilled condensed milk (1 cup)


1. Prepare cookies and cream:

Beat whipping cream until stiff peak forms. Add condensed milk to it and whisk for 30 seconds. Finally, add roughly crushed oreo cookies to it and mix. Freeze for 2 hours. We want the ice cream to be soft.

You can also buy cookies and cream from the store.

2. Prepare the crust:

In a food processor, crush oreo cookies and pour melted butter into them. Add this mixture to a pie tray and press it with a spatula. Freeze for 30 minutes.

3. For the filling:

Put heavy whipping cream, whole milk, sugar, and cocoa powder in a bowl. Whisk until everything is combined. Add vanilla extract, fold, and set it aside.

4. Assemble:

Now that your ice cream and oreo crust are chilled: start assembling your pie. Add a layer of cookies and cream over the oreo crust. Freeze for 30 minutes.

Top it with the chocolate-cream mixture. Put in the freezer for another couple of hours. Garnish with oreo cookie chunks.

Orange and Lime Pie

The first thing that comes to mind when making a pie is key lime. Its zest has a tart taste, while the juice is sweet - giving a perfect balance to the dessert. We’ve added a twist to the recipe by adding orange juice.


For the crust:

  • Graham crackers (10) 
  • Coconut powder (3 tbsp)
  • Melted butter (¼ cup) 

For the filling:

  • Orange juice (½ cup)
  • Lime juice (¼ cup)
  • Gelatin (1 tbsp)
  • Orange zest (1 tbsp)
  • Lime zest (1 tbsp)
  • Condensed milk (3.5 cups)
  • Egg yolks (5)
  • Heavy whipping cream (¼ cup)
  • Vanilla extract (1 tbsp)


Crush the graham crackers in a food processor. Add coconut powder and melted butter and give it a good mix. Put the mixture in a pie tray and bake it for 7 minutes at 350 F.

Heat orange juice and lime juice in a pan. Add gelatin and whisk until it dissolves.

Add condensed milk, heavy whipping cream, and egg yolks to a bowl. Whisk until well-combined. Now add orange zest, lime zest, and vanilla extract and whisk. Pour the orange and lime juice mixture into it, and mix.

Pour this filling over the baked graham crackers and bake at 350 F for 15 minutes. Let it cool down before you serve it.

Strawberry Pie

You know a dessert is legit if there are strawberries in it. It is because of the extraordinary rich flavor they add to a dessert.

This strawberry pie has the perfect sweetness of strawberries with a creamy filling of cream cheese, sour cream, and whipping cream. It also contains a little sour cream that won’t dominate the other ingredients but will enhance the overall flavor.


  • Graham crackers (10)
  • Melted butter (3 tbsp)
  • Strawberries (3 ½ cups)
  • Butter (¼ cup)
  • Powdered sugar (1 cup)
  • Corn starch (1 tbsp)
  • Lemon juice (2 tbsp)
  • Egg yolks (4)
  • Whole egg (1)
  • Salt (⅛ tsp)
  • Heavy cream (4 tbsp)
  • Greek yogurt (2 tbsp)
  • Sour cream (1 tbsp)
  • Cream cheese (½ cup)


Crush graham crackers in a food processor. Pour melted butter and fold. Transfer it to a pie tray, press with the spatula, and refrigerate while you prepare the filling.

Put strawberries in a food processor and make a puree. Strain and pour it into a saucepan with melted butter. Add sugar, salt, corn starch, lemon juice, egg yolks, and egg and whisk. Turn off the heat until the mixture thickens up a bit (it would take about 5 minutes). Strain.

The flame should be low during the whole process.

Whip up cream cheese and heavy cream in a bowl for a minute. Add sour cream and greek yogurt, and whisk until it’s fluffy. Add the strawberry curd and fold.

Pour this mixture over the graham crackers, and freeze for 5 hours. Decorate with whipped cream and strawberry slices. Serve.

Walnut and Pecan Pie

This oh-so-delicious pie is a must for your dessert menu. If you don’t like eggs, this recipe is perfect for you.


For the crust:

  • All-purpose flour (1 ½ cup)
  • Powdered sugar (3 tbsp)
  • Chilled butter (3 ½ oz)
  • Oil (2 tbsp)
  • Water (3-4 tbsp)

For the filling:           

  • Powdered sugar (1 cup)
  • Water (⅛ cup)
  • Caramel sauce (1 tbsp)
  • Softened butter (½ cup)
  • Vanilla essence (1 tbsp)
  • Whipping cream (¼ cup)
  • Walnuts (¼ cup, chopped)
  • Pecans (¼ cup, chopped)
  • Almonds (3 tbsp, chopped)


Add all-purpose flour, powder sugar, and chilled butter to a bowl. Mix everything using your hands - it will form crumbs. Add water and oil to it and knead the dough. Wrap with plastic paper and let it sit for 1 hour.

Roll the dough with the help of a rolling pin. Transfer it to a pie tray and cut the excess.

Poke holes in the crust using a fork. Now bake for 20 minutes at 350 F. Place an aluminum foil over the tray while baking; so it doesn’t burn.

Heat powdered sugar, water, and caramel sauce and cook for 2 minutes on low flame. Add butter and vanilla essence, and let it cook while whisking continuously. When the mixture thickens up, turn off the heat, and add pecans and walnuts.

Pour this mixture over the baked crust, top with chopped almonds, and refrigerate for 6 hours. Serve!
