Raspberry Lemon Honey Ice Cubes

Ingredients:

  • 1 pint raspberries (crushed)
  • 1 lemon (juiced) (about 1/4 cup)
  • 1 tablespoon honey
  • 2 cups water

Directions:

  1. Combine raspberries with lemon juice
  2. Boil water
  3. Add honey to water, mix until dissolved
  4. Stir raspberry mixture into water mixture
  5. Let sit for 20 minutes
  6. Strain raspberries out of mixture (taking as little liquid as possible)
  7. Pour liquid into ice cube trays
  8. Freeze
Michelle suggests using the ice cubes in orange juice, sparkling water, and iced tea. YUM. And as for the leftover raspberries... They can be used in yogurt, as a topping on waffles or pancakes, etc...
